When we opened thirteen years ago, our emphasis was on producing great
brick-oven pizza in the famous tradition of Wooster Street in New Haven.
We hope you agree that we've succeeded on that score. We bake our
own bread in that same wonderful brick oven. Gradually, as our menu
has expanded, we've evolved into a traditional Tuscan trattoria. But
some things have not and will not ever change - we use only the freshest
and very finest ingredients available. You may or may not know the
names, like Bell & Evans® chicken, Ocean Garden® shrimp,
Provimi® veal, but you will taste the difference. Our bread and
pizza crust is created here in a three day process (you can't take
shortcuts and still get the great texture). We're fussy about the
quality and freshness of the vegetables we serve. Our incredible Celebrity®
European bacon is like no other bacon you've ever tasted. All of our
sauces originate in our own kitchen, as do all of our desserts. Our
wine list is chosen with an emphasis on exceptional affordable wines.
